Cake Batter French Toast

Sweeten up your morning with this tasty take on a brekkie favourite!



4 thick slices Hi-Fibre Lo-GI Loaf
1 cup box vanilla cake mix
2 free range eggs
1 tsp vanilla extract
1/4 cup milk
2 tbsp butter
Fresh berries and icing sugar to decorate


    1. Step 1

      In a medium bowl, combine the cake mix, eggs, vanilla extract, and milk until smooth.

    2. Step 2

      Dip one slice of bread at a time into the batter, making sure to evenly coat both sides.

    3. Step 3

      Melt 1 tablespoon butter in a large frying pan over a medium-high heat.

    4. Step 4

      Place two slices in the pan and cook until both sides are evenly golden. Repeat with remaining butter and bread.

    5. Step 5

      To serve, decorate toast with fresh berries and icing sugar.
