Chicken, Avocado & Pineapple Roll

Sick of your boring lunch routine? Add this delicious Chicken, Avo & Pineapple Roll into the mix!



4 slices Bakers Delight White Round Roll
1 chicken breast (300g)
½ avocado
Squeeze of lemon juice
Black pepper
2 lettuce leaves
2 pineapple rings


    1. Step 1

      The night before, bring a small saucepan of water or stock to boil. If you like you can add a couple of bay leaves or a sprig of thyme or other herbs to the pan. Reduce the heat to a simmer and cook for about 15 minutes. Turn off the heat and let the chicken sit in the hot liquid for another 5-10 minutes. Remove the chicken and allow to cool before slicing and storing in a container in the fridge. The cooked chicken will keep for 3-4 days

    2. Step 2

      Mash the avocado with the lemon juice and black pepper. Spread over two slices of the bread

    3. Step 3

      Layer the chicken over the avocado, followed by the lettuce and pineapple. Close the sandwich and wrap or pop into reusable containers
