Serves  8                     Difficulty  Easy

Prefer to go meatless? These chickpea falafel sliders are so tasty, they’ll be gobbled up by everyone! Topped with cool, refreshing cucumbers and a generous drizzle of hummus, they’re quick and easy to eat and make!

Ingredients

Falafel

1 cup canned chickpeas, rinsed and drained
1/2 onion, peeled
2 cloves garlic, peeled
3 tbs coriander, chopped
2 tbs parsley, chopped
1 tsp ground cumin
1 tsp baking powder
1/2 tsp salt
1/4 tsp pepper
1/4 cup all-purpose flour
Pinch of red pepper flakes (optional)
Oil for frying

Sliders

8 Bakers Delight Dinner Rolls
1 cucumber, ribboned
Hummus (we used store-bought)

Method

Meatballs

STEP 1

To make the falafel, add the chickpeas, onion, garlic, coriander, parsley, ground cumin, baking powder, salt, black pepper, flour and red pepper flakes, if using, into a blender or food processor. Puree until the mixture is mostly smooth. Refrigerate for at about 15 minutes

STEP 2

Add about 7cm of the canola oil to a large pot or deep sided pan

STEP 3

Form the falafel into balls and place gently into the hot oil. Allow to fry for about 2 minutes and gently rotate the balls to continue frying on all sides. The falafel balls are done when they are a golden brown colour all around

STEP 4

Remove from the oil with a slotted spoon and place on a paper towel to drain

STEP 5

Gently toast the Dinner Rolls in preparation of building your sliders

STEP 6

Prepare the sliders by spreading hummus on the top and bottom of each roll, then add a falafel ball and smash it down gently with the palm of your hand. Top with ribboned cucumbers
