Herbed Roast Chicken

A classic family favourite, perfect for special occasions or just a delightful Sunday roast. Serve with vegetables and salad for a complete family meal!



Whole chicken (1.6kg)
1 lemon cut in half
100g butter softened
Sea salt and cracked black pepper
Olive oil
1 handful of oregano, thyme and sage roughly picked (you could use any hard herbs you have on hand)

      Preheat oven to 200°C

    2. Step 2

      Using your fingers carefully loosen the skin on the breasts. Push the softened butter under the skin and work it using your fingers to cover the breasts fully

    3. Step 3

      Place the lemon halves into the chicken’s cavity and tie the legs shut with kitchen twine

    4. Step 4

      Place the chicken into a large baking tray lined with baking paper

    5. Step 5

      Rub with the oil and sprinkle generously with salt and pepper
      Sprinkle with picked herbs

      Place in oven and roast for an hour
