Sandwich Cake

1 Bakers Delight Hi-Protein Wholegrain Loaf 
750g smoked salmon
500g cream cheese
Large bunch of chives
Jar of capers
Large bunch of dill with the fronds removed from the stalks
2 Lebanese cucumbers
1 Large radish bunch
1 Red onion
Medley colourful tomatoes


    1. Step 1

      Cut all the crusts off slices of Hi-Protein Wholegrain bread (sliced for toast or else thickly hand sliced)

    2. Step 2

      Lay the first 4 into a square on your plate

    3. Step 3

      Whisk up your softened cream cheese 

    4. Step 4

      Lather a thin layer of cream cheese with a knife or spatula and top with sliced cucumber

    5. Step 5

      Add another 4 slices of bread, then lather thinly with more cream cheese. Top this with a layer of salmon and ensure the whole surface is covered

    6. Step 6

      Add another 4 slices of bread and cover thinly with cream cheese. Add a layer of sliced radishes, then generously cover this layer with some dill and capers to taste

    7. Step 7

      Add a final layer of bread and then cover the whole top and sides with cream cheese, ensuring to cover surface area

    8. Step 8

      Measure your chives to the height of your cake and trim off the excess. Cover the sides of your cake with chive stalks

    9. Step 9

      Top with a bouquet of sliced cherry tomatoes, red onion slices, and any leftover cucumber, dill, capers and radishes you want for colour. You can also add a grate of lemon zest for a bit of extra zing (optional). Voila!
