8 slices Bakers Delight Chia & Fruit Loaf, toasted
1 cup / 250g fresh ricotta
1/2 cup thick coconut cream (see tips)
2 tsp maple syrup
1/2 tsp vanilla bean paste
100g fresh strawberries, hulled and sliced
Drizzle balsamic vinegar or vino cotta
Small basil leaves, for garnish (optional)
Place ricotta, thick coconut cream, maple syrup and vanilla into a blender and blitz until smooth and creamy.
Place Chia & Fruit Loaf into toaster, when ready, spread over some ricotta and coconut cream, then top with sliced strawberries, drizzle with balsamic or vino cotta and garnish with basil leaves. Serve immediately.
